1/2 cup unsalted butter, softened

1 cup light brown sugar, packed

1 large egg, at room temperature

1 ½ teaspoons vanilla extract

1 cup all-purpose flour

½ teaspoon baking powder

½ cup golden seedless raisins

½ cup toasted walnuts, chopped

Heat oven to 330 degrees. Lightly grease bottom of 8-inch square baking pan.

In medium bowl beat butter, brown sugar, egg and vanilla on low speed until combined. Scrape bowl well. Increase speed to medium and beat 1 minute until smooth. Stir in flour and baking powder. Add raisins and walnuts. Scrape bowl well.

Spread batter into prepared pan and bake 35-40 minutes until top is golden brown and tester inserted at center comes out clean. Cool blondies for 1 hour before cutting into squares. Store tightly covered at room temperature.

Serves nine.

Baker's hint: For a chewier bar, bake in a 9-inch square pan at 330 degrees for 25 minutes.
